Amla, also known as “gooseberry or Indian gooseberry” needs no introduction. One of the richest natural resources of Vitamin C which has a lot of benefits like improved digestion , relieves acidity, controls blood sugar level, a blessing for hairs….., and many more. We try to find ways to include it in our meals and chutney is always on top of it. Gud amla chutney or khatti- meethi chutney goes really well with any paratha or thalipeeth.

Ingredients –
Amla/Gooseberry -250 gm
Gud/Jaggery -250 gm
Oil -1tbsp
Black salt -as per taste
Roasted jeera powder -1tsp
Red chili powder -1tsp
Haldi /Turmeric -1/2 tsp
Dry red chili -1
Panchforan – 1tsp

Method –
1- Boil amla in 1 glass of water for 5-10 minutes. Till the amla is soft and starts opening.
2- Remove it from water and let it cool down completely.
3- Remove the seeds and mash it coarsely.
4- Health oil in a pan/kadai, add panchforan, dry red chili.
5- Add the mashed amla and fry for 2-3 minutes. Keep the flame medium-low.
6- Next add haldi, red chili powder and salt. Mix well. Fry for 2-3 minutes.
7- Add gud /jaggery and let it cook on low flame till the gud completely melts and amla is soft and creamy in gud syrup.
8- Lastly add roasted jeera powder, mix well and the chatpati chutney is ready
9- You can store it in an air-tight container for 1 month.
