Ingredients for Dal Dhokli Recipe
Arhar Dal – 1/2 cup (100 grams)
Wheat Flour – 1/2 cup (100 grams)
Gram flour – 2 tbsp (20 grams)
Tomato – 1 (finely chopped)
Ghee – 2 -3 tbsp
Asafoetida – 1 pinch
Cumin seeds – 1/2 tsp
Red chilly powder – 1/4 tsp
Turmeric powder – 1/4 tsp
Coriander powder – 1 tsp
Dry red chilly – 1
Green chilly – 1 (finely chopped)
Curry leaves – 7-8
Green coriander – 1 tbsp (finely chopped)
Salt – 1.5 tsp or as per taste
Carom seeds – less than 1/4 tsp
How to make Rajasthani Dal Dhokli Recipe
Thoroughly wash arhar dal and soak it for ½ -1 hour in water or overnight.
Sieve wheat flour and chickpea flour sep
arately in a bowl.
Pressure cook soaked arhar dal with 2 cups water and 1 tsp salt until it releases a whistle. Then low down the flame and cook it for 2-3 minutes. Switch off the flame. Don’t uncover until the cooker releases its pressure.
Take the sieved wheat flour and chickpea flour in a bowl. Add ¼ tsp salt, 1 tsp ghee and carom seeds. Mix it well. Prepare soft dough by adding little water at a time. For this amount of flour, ¼ cup of water has been used. Cover the dough and let it rest for about 10-15 minutes, so that it rises.
Apply little ghee on your palms and rub the dough till it becomes smooth. Dhokli dough is ready. Roll the dough in a ball. Sprinkle little flour on the rolling board and flatten it to a big size chapatti.
Cut it into 1 inch strips and further cut the strips into 2-4 small sized pieces.
To cook dhokli, boil 2-3 cups of water in a utensil. Drop the dhokli into the boiling water. Let it cook for 10-15 minutes on high flame and stir in between while cooking.
Prepare the tempering by heating ghee in a pan. Add cumin seeds and asafoetida in the heated ghee. As cumin seeds splutters add turmeric powder, curry leaves whole dried red chilly, chopped green chilies and coriander powder.
Stir a little then add chopped tomatoes and red chilly powder. Stir till the masala starts leaving edges. Masala is ready.
Now mix cooked dhokli into the dal followed by masala and mix nicely. Let the dal cook for 5 minutes on low flame. Add chopped coriander leaves. Yummylicious Rajasthani dal dhokli is ready.
Serve it hot in a bowl garnished with chopped coriander leaves and ghee
